DESCRIPTION:
Sodium nitrite is an inorganic compound with the chemical formula NaNO2. It is a white crystalline powder that is easily soluble in water and slightly soluble in ethanol, methanol, and ether. It is mainly used in the production of azo dyes and can also be used as a mordant, bleach, and metal heat treatment agent for fabric dyeing.
Sodium nitrite (NaNO2) is the most commonly used food additive in the production of meat products. Sodium nitrite is a strong oxidant that binds to hemoglobin after entering the bloodstream, causing tissue hypoxia and resulting in cyanosis and poisoning in the human body. Sodium nitrite has a very similar appearance to table salt and is prone to misuse. As a food additive, sodium nitrite is allowed to be added to cured meat products, marinated meat products, smoked and grilled meat, fried meat, Western style ham, meat sausage, fermented meat products, canned meat, and meat processing. Its characteristic is that it can increase the freshness of meat and inhibit microorganisms, helping to maintain the structure and nutritional value of meat products. The drawbacks of sodium nitrite are also obvious. As it is a highly toxic substance in food additives, the maximum limit intake of the human body at a time cannot exceed 0.3 G. If this limit intake is exceeded, it can cause sodium nitrite poisoning and even death in the human body. Therefore, it is advisable to use as little or as little as possible during food production. The standard number of sodium nitrite as a food additive is GB1886.11-2016.
